Aux Saveurs du Marais, that means tasting and experiencing the region Marais Audomarois. And that is exactly what people do in the shop in Saint Omer, selecting the best vegetables, meat and dairy products that come directly from the Marais farms.
It started with several farmers from the Marais Audomarois. They wanted to sell their local products directly to the people living in the area. The shop is set up especially to help to maintain the traditional landscape of the Marais Audomarois. The Audomarois marshland of northern France accommodates not only the foremost area of the production of cauliflower and other vegetables as well as an extremely rich wetland with more than twelve hundred species of flora and fauna. The agricultural practice that has made this landscape is subject to pressure for change.
Since 2006 Saint Omer has a large shop with a large assortment of seasonal tomatoes, lettuce, courgettes, artichokes, celery, pears, turnips and special vegetables like chicory from the ground and old vegetable varieties like the Martinet cauliflower. In the shop farmers also sell the beef from Charolais cattle fed with herbs, the pork from pigs that live on straw, and dairy products like milk, butter and yoghurt.
Aux Saveurs du Marais is also aimed at linking the urban people in the Marais Audomarois region to the countryside. Besides the fresh farmers' products the shop also sells traditional regional products like the regional goat cheese Fromage de Bergues, traditionally produced meat products like pâté, cured ham and sausages, artisanal beers and jenevers, apple juice, honey, pastry and waffles. In this way the shop is not only a showcase of products from the regional landscape but also a presentation of the gastronomic heritage of the Marais Audomarois.
